12 SEATS are arranged around a U-SHAPED BAR which features a one of a kind ICE MOAT in a semi-private / private dining space. This unusual use of space unlocks dining opportunities not available in restaurants or Chef’s tables. We deliver a 10 course meal, not a “tasting menu”. You will NOT leave hungry. This menu is features dishes which are cooked, and raw. Some are served hot and others are served cold or at room temp.

Our unique USE OF SPACE allows us to create a FUSION CONCEPT. In it we fuse an Ancient Oriental (Japanese) service style: OMAKASE with a Modern, Occidental (Euro-Merican) Cuisine: RAW BAR. We make it a meal with creative riffs on traditional species, preparations and presentations. You’ll experience a an OYSTER FLIGHT and a CAVIAR TRIP. You’ll partake in what we call WINE TRAVEL as you learn what MARINE CUISINE is. Finally, you’ll understand how we incorporate a SEA SALT COMPLEX into it all to optimize the nutritional value of the meal. It may just change your life, forever, as it has for so many already. RAW LAB requires and delivers a lot more from and to the guest than a typical dining experience. Think of it as “Dinner & A Show” that runs about 4 hours and delivers a singular mix of food, wine, edu-tainment, music, atmosphere & theater. Nothing “bizarre or odd” is served, rather, traditional raw bar fare is delivered in a service style previously reserved for elite sushi. And we push the boundaries of “Raw Bar” a bit too. Expect oysters, caviar, shrimp, lobster, salmon, scallops and more served in a variety of preparations and presentations that are colorful, healthy, responsible, sustainable, nutritious and delicious.
INTROVERTS BEWARE! This is not for you. Private conversations are not sustainable and the use of phones beyond that of talking photos and making videos is generally the wrong . Guests must engage with the experience, food, wine, space, chef and other guests. Come expecting to add to the experience by being present and contributing to it.
EXTRA -VERTS BEWARE! We designed this all for extroverts! But remember, you’ll be there SHARING the space, the time and the attention of the Chef with others. The other guests are probably very interested in what the Chef has to say about the food, wine, pairings and seafood in general. Overly exuberant guests can slow down the process dramatically which can be an imposition on the other guests.

While we are based in Charleston, we have teams around the country and we will travel anywhere the budget allows (and we often do). We have extensive experience and a broad network of local farmers and fisherman everywhere which has allowed us to source locally and execute flawlessly, for 15 years, in places like The Hamptons, DelMarVa, Palm Beaches, Newport, New York City, Miami, North Carolina, Seattle, San Francisco, Connecticut, Los Angeles and beyond.
If you live in Charleston, we can cater smaller gatherings, locally, at surprisingly reasonable rates. Roasts, Raw Bars and Private Chef services are all available.
If you are visiting Charleston and you are staying at a private home or AirB&B we can often provide Oyster Roasts, Raw Bars and Private Chef services as well.







2025: THE YEAR OF THE STURGEON
And for both locals and visitors we have a new service: CaviarOnDemand
Yeah, we’ll bring fine caviar (with or without Champagne) right to your door. We are launching this service in March as part of MARSH MADNESS in 2025.
Why Caviar? Because when you know how to enjoy it, Caviar really delivers! It is finally trending in the US and foodies, gourmands and Epicureans are beginning to really appreciate it like they have come to appreciate oysters in the past 10 years or so.






With your delivery you will be able to experience what we call, the Caviar Trip. ’ll take you on one when we deliver. If you’ve been to RAW LAB you’ve been on the Caviar Trip, and you know. For those who have not, here’s a little video for ya.
SHUCK TRUCK & RAW BOAT
We also have the best set up ever! It features The Shuck Truck, which can be used as a “back bar” for a larger activation. She has two taps that serve up ice cold beer. And in front of her is our RAW BOAT, a service station for the RAW BAR to be presented on. Together this is an unbelievable presentation.
