JOURNEY & DISCOVERY - When we began this menu concept we had a vision to use the meal to be a journey through the ecosystems that create and support “seafood”. Its not a biology class, but there is much to discover in the process. We start in the fresh water “river” with the caviar from the sturgeon. From there we move into the marsh and inter-tidal flats where oysters, clams and mussels are abundant. After that we enjoy the fruits of the shallow bays and near shore waters with crab, scallops, small fin fish and and more. Finally, we head for the deep, pelagic zones of the ocean for larger fin fish, lobster, squid and octopus. The journey is about much more than the food. It is about how we enjoy protect, preserve and restore these habitats which we we have relied on for millennia. The history, culture, cuisine, economy and ecology of any nation with a coastline has been and will continue to be greatly affected by these habitats.
